In the heart of Fresno, a new Chinese restaurant, Dragon Wok, has opened its doors, carrying on a legacy of culinary excellence and family tradition. The story of Dragon Wok begins with Alan Wong, a third-generation chef who grew up in the bustling kitchen of his parents' restaurant, learning the art of cooking and the value of hard work.
As a young boy, Alan would spend hours peeling snow peas and shucking shrimp, tasks that might seem mundane but were integral to the family business. Despite the challenges, he recalls those moments with a mix of nostalgia and humor, highlighting the sacrifices and joys of a family-run restaurant.
"My friends were playing outside, while I was peeling snow peas with my tiny fingers, often getting jabbed by shrimp spines. It was tough, but those memories are etched in my mind," Alan shared, now with a warm smile.
Dragon Wok, which opened in October, is a fast-casual Chinese restaurant offering a variety of dishes, with a special emphasis on its Dragon Wok house chow mein. The restaurant's modern setup, once home to Wassabi, provides a relaxed dining experience for customers.
Alan's goal was to bring the family's unique flavors to Fresno, offering familiar dishes with a twist. He explained, "We serve the same items as other Chinese restaurants, but our presentation and flavors set us apart."
The restaurant has already gained popularity, earning positive reviews on Yelp with a 4.8-star rating from 31 reviews. One customer, a Chinese/Vietnamese-American, praised Dragon Wok, stating, "This place evokes the cozy atmosphere of a mom-and-pop Chinese restaurant. The portions are generous, the prices are fair, and the food is delicious."
Alan's culinary style and seasoning techniques were heavily influenced by his parents, who are originally from China. They moved to the United States and established a chain of restaurants in smaller Fresno County cities, including New China Cafe in Reedley, China Garden in Kingsburg, and the China Garden buffet in Selma.
Alan's parents worked at China Garden in Selma for the longest, and he later took on a significant role in the restaurant's operations, gaining valuable experience. With further education from culinary school in the Bay Area, he felt ready to venture out on his own and opened China Garden Express in Reedley.
After seven years, he sold that restaurant and returned to the family business, working at the China Garden buffet in Selma. The restaurant was eventually sold in 2023 after 35 years of operation.
When asked about his future plans, Alan said, "My parents encouraged me to explore other opportunities, understanding the demanding nature of the restaurant business. But cooking has been my passion since childhood, and I love it."
